Aubergine and lentil one pot

Ingredients

  • Aubergines 240 grams/ml
  • Lentils 240 grams/ml
  • Lima/butter bean 240 grams/ml
  • Tomatoes 80 grams/ml
  • Tinned tomatoes 400 grams/ml
  • Chilli (pepper) 40 grams/ml
  • Paprika powder 30 grams/ml
  • Cumin powder 10 grams/ml
  • Garlic 5 grams/ml
  • Maple Syrup 15 grams/ml
  • Rapeseed (Oil) grams/ml

Instruction

  • Add oil to a deepish pan.
  • When hot add the chopped onion and fry for 10 minutes.
  • Then add the crushed garlic and sliced red chilli - cook for another minute.
  • Then add the spices and cook for 30 seconds.
  • Add the aubergine cut into small cubes and stir into the spices.
  • Add chopped tomatoes and the tinned with a little bit of water. Add the Maple syrup.
  • Now leave that to cook for 30 minutes until the aubergine is cooked and liquid reduced.
  • Add the beans and lentils and season.

Extra Notes

  • 30g of paprika= 2 tbsp
  • 240g= 1 aubergine
  • 10g of cumin= 2 tsp
  • 1tbsp of maple syrup
