- put on a nonstick frying pan on to heat and thinly slice the onion, garlic and shiitakes
- add the shiitakes to the pan and dry fry until they have shrunk and lost some of their water.
add the onion and garlic, stirring constantly
- add the spices, hoisin and soy sauce to the pan and stir
- cook until soft and serve drizzled with garlic oil and more sliced garlic
