Cooking Time: 1 hour
Soak the lentils in cold water for an hour .
Sieve the lentils and cook them in the stock for about an hour or until they are soft but still with a bite .
Whilst the lentils are cooking finely chop the onion, carrot courgette and red pepper and cook them in a large pan with the olive oil and a little salt and black pepper .
Once lentils are cooked add them to the pan with the onions, peppers , courgettes and carrots and let them simmer on a very low heat so the flavours intensify and the liquid is reduced .
This meal is delicious by itself or can be enjoyed as a side dish with a piece of salmon filet or a vegetarian option.
