Courgette farfalle


( Serves 2)

  • Courgettes 250 grams/ml
  • Pasta 200 grams/ml
  • Onion 100 grams/ml
  • Garlic 10 grams/ml
  • Chilli (pepper) grams/ml
  • Olive oil 30 grams/ml
  • Lemon 40 grams/ml


  • Chop one onion and add to a pan with 1tbsp of olive oil - cook until soft.
  • Chop the courgettes (about 2 med-large ones) and add to the pan and cook for 5-10 minutes until they start to soften.
  • Get your pasta of choice on.
  • Add 2 cloves of sliced garlic and a 1 tsp of chilli flakes. Cook for 1-2 minutes.
  • Add a ladle of the pasta water to the the pan and reduce.
  • You can add nooch here or cheese (though will raise the impact).
  • Add your pasta to the pan, pour the rest of the olive oil on and half a lemon. Then salt and pepper and stir and till all the pasta is coated.
  • Serve with extra pepper and a quirt of lemon.
