egg fried rice


( Serves 1)

  • Rice 1 grams/ml
  • Eggs 1 grams/ml
  • Spring onions 1 grams/ml
  • Olive oil 10 grams/ml
  • Onion 10 grams/ml
  • Sweet corn 25 grams/ml
  • Tomatoes 1 grams/ml
  • Mixed herbs 5 grams/ml
  • Cayenne pepper 5 grams/ml



  1. get 1/2 cup cooked leftover rice out of the fridge. 
  2. Heat the olive oil in a frying pan. Add the chopped red onion, spring onion and grated garlic clove and sizzle for a few minutes. 
  3. add the cayenne pepper and herbs 
  4. add a handful of frozen sweetcorn and a chopped tomato 
  5. stir in the rice 
  6. whisk a large egg (or 2) in a bowl and add to the pan, stirring constantly with a spatula 
  7. fry until the egg is completely combined and cooked through
  8. serve with seasoning, a drizzle of olive oil and a dollop of red pepper chutney

Extra Notes

requires pre-cooked rice 

can sub in other veg depending on what you have in the house 

great for lunch or a quick dinner
