- get 1/2 cup cooked leftover rice out of the fridge.
- Heat the olive oil in a frying pan. Add the chopped red onion, spring onion and grated garlic clove and sizzle for a few minutes.
- add the cayenne pepper and herbs
- add a handful of frozen sweetcorn and a chopped tomato
- stir in the rice
- whisk a large egg (or 2) in a bowl and add to the pan, stirring constantly with a spatula
- fry until the egg is completely combined and cooked through
- serve with seasoning, a drizzle of olive oil and a dollop of red pepper chutney

requires pre-cooked rice
can sub in other veg depending on what you have in the house
great for lunch or a quick dinner
