Roasted chickpeas and veg


( Serves 2)

Cooking Time: 45 minutes



  • Chickpeas 240 grams/ml
  • Potatoes 100 grams/ml
  • Red pepper 160 grams/ml
  • Courgettes 160 grams/ml
  • Cumin powder 5 grams/ml
  • Paprika powder 30 grams/ml
  • Olive oil 30 grams/ml


  • Turn your oven to 180-200 degrees on fan.
  • Add your chopped potatoes to a pan with half the oil and put in the oven.
  • Chop all the over veg and drain the tin of chickpeas.
  • Add these to another pan with the rest of the oil and the spices and salt and pepper. Coat all the veg and chickpeas.
  • Place in the oven, after the potatoes have been on for 15 minutes.
  • Take with fans out when cooked and mix all together.
  • Season again if needed.

Extra Notes

  • The veg can/should be switched for what is in season.
