Tomato and (vegan) pesto tart

Ingredients

  • Tomatoes 350 grams/ml
  • Pastry 280 grams/ml
  • Basil, herb 100 grams/ml
  • Pine nuts 50 grams/ml
  • Garlic 10 grams/ml
  • Olive oil 150 grams/ml
  • Yeast 30 grams/ml

Instruction

  • Blend all the pesto ingredients into a lumpy paste.
  • Lay out the pastry on to a tray.
  • Spread the pesto onto the pastry.
  • Slice the tomatoes in half and lay them on top.
  • Put the tart in an oven, around 180 fan, and cook for 20 minutes.

Extra Notes

  • Yeast is nutritional yeast
  • Good with butter bean mash and asparagus (if in season)
